Ingredients
- 1 cup basmati rice
- 1 carrot (chopped)
- 1 potato (small cubes)
- ½ cup beans
- ½ cup peas
- 1 onion (sliced)
- 1 tomato (chopped)
- 2 tbsp curd
- 1 tsp ginger-garlic paste
- 2 green chilies
- Whole spices: bay leaf, cinnamon, cloves, cardamom
- ½ tsp turmeric
- 1 tsp biryani masala
- Salt as needed
- 1 tbsp oil + 1 tsp ghee
- Mint & coriander leaves
Method
- Wash and soak rice for 20 mins.
- Heat oil + ghee, add whole spices and onion. Cook till golden.
- Add ginger-garlic paste, tomato, green chili, turmeric, salt & biryani masala.
- Add all vegetables and cook 5 mins.
- Mix curd, mint & coriander.
- Add soaked rice and 2 cups water.
- Cover and cook till rice becomes fluffy.
- Garnish with fried onion & mint leaves.
Green Mint Chutney 🌿
- Ingredients
- 1 cup mint leaves
- ½ cup coriander leaves
- 1 green chili
- 2 garlic cloves
- 1 tbsp lemon juice
- Salt
- 2 tbsp curd (optional for creamy texture)
Method
Blend everything with little water until smooth.
Serve chilled with biryani 💚
